I think the following would be an easier solution:
Fill the 4 gallon bucket with water and then tilt it until the level of the water is exactly at the bottom edge of the bucket. Even without gradations, we know the bucket will now be exactly half full, meaning it contains 2 gallons of water. Fill the 7 gallon bucket and pour water from it into the half empty 4 gallon bucket until it is full. Exactly 5 gallons of water will remain in the 7 gallon bucket.

There is more solutions.
Fill 7 , pour it to 4, left 3 in 7
Cast 4 out, and fill it with 3 form 7
Fill 7 and pour 1 to 4 (since it has 3 already), 7 is left with 6
cast 4 out, pour from 7 to 4 ( 7 is left with 2)
Cast 4 out, pour 2 from 7, fill 7 ( 4 has 2, 7 has 7)
Pour 2 from 7 to 4 (which already has 2 ) and you are left with 5 in 7
